Try "The Complete Book of Mexican Cooking," by Elisabeth Lambert Ortiz 
(Bantam Books, in paperback).  It's quite authentic, as she learned by 
living in Mexico (all around it) after her marriage.

Uh, Balanone, has it occured to you that there's a very good reason it's 
not legal?  As in, most of the turtles used for soup have been hunted to 
near extinction, and perhaps it might not be such a hot idea to add 
another one to the pot?
