Double Chocolate Roll 1 batch - Chocolate Sponge Cake Batter 1 batch - Chocolate Cream Topping/filling 4 egg whites 1/4 tsp cream of tarter 1/4 tsp salt 1/3 cup sugar 2 egg yolks 1 tsp vanilla 1/4 cup all purpose flour 1/4 cup cocoa Line a 8in square or round cake pan with waxed paper. Place egg whites, cream of tarter and salt in mixing bowl, beat with rotary beater or electronic mixer until foamy. Beat in sugar gradually, continue beating untill stiff peaks form. Beat in egg yolks and vanilla. Combine flour and cocoa and fold lightly into egg mixture. Spread batter in prepared panBake in 400f oven for 10 minutes or until cake springs back when lightly touched. Lossen sides with sharp knife. Turn out immediately onto a paper towel-lined cake rack to cool. Serving = 1 fruit/vegetable serving here....makes 12 servings Cream topping/filling 1 packet unflavoured gelatin 1/4 cup cold water 1 cup boiling water 3/4 cup instant milk powder sweetner equivalent to 12 tsps. 1 tsp vanilla 2 tsps maple or orange extract or 1 tsp peppermint 2 tsp vegetable oil 1 egg white,stiffly beaten Sprinkle gelatin over water to soften,let stand 5 min. Stir in boiling water until gelatin dessolves. Cool 5 min. Stir in milk powder and sweetner until completly dissolved. Refrigerate until partialy set. Chill beaters. Beat on high speed until stiff peaks form. Beat in vanilla and maple extract and vegetable oil. Fold in stiffly beaten egg white until thoroughly mixed. To eat alone it is worth 1/2 milk choice here...makes 12 servings. Back to the Roll now Line bottom of a 9 1/2 x 13 jelly roll pan with heavy waxed paper. Spread chocolate sponge cake batter in prepared pan. Bake in 400f oven for 10 minutes or until it springs back. Loosen edges with a sharp knife. Turn out immediatly onto a clean cloth. Cut off edges if too crisp. Roll up in cloth to shape roll. (prevents cracking) Set aside, seam side down to cool. Unroll, remove cloth. Spread with cream filling recipe. Reroll and place seam side down on serving platter. Makes 8 servings 1 milk choice 1 fruit choice per serving. The American Diabetes foundation probably has books in print the Canadian one does up here. That is where this one came from.
