I wanted something inexpensive, easy to make and enduring. I started whomping up quick breads every weekend. I take a big hunk with me to work every day for lunch, and it lasts until the following weekend. And you can vary it as much as you like. I work full time and go to school at night, so by the time I get home I'm not in much of a cooking mood. Other than the bread, or other baking things during the weekend, I eat lots of cereal and nuts (for protein) plus I use a protein supplement with apple juice every morning. Fruit and lots of fiber... veggies... pf. I'm one of those people who feels obligated to buy lettuce and watch it wilt every damn week ;) Celery and peanut-butter (I get it "fresh-squeezed" from the health food grocery) does the trick. Tight budgets and busy schedules need creative food shopping! And theirs always picking up something from the deli... *BB* -l ... When it comes to kneading, every cookbook says something else... would you mind posting a basic technique for making yeast-bread for the beginner?
