There's nothing really authoritative on the subject, and, IMO, there shouldn't be. The "angels" respond differently for everyone, depending on what the person's expectations are. They're very obliging in that way. Personal experience is the best teacher, in this case. As for reference texts, you ought to have "The Enochian Evocation of Dr. John Dee" by Geoffrey James, and "The Heptarchia Mystica of John Dee" by Robert Turner. Both books are mainly extracts from Dee's journals, along with some scholarly efforts to rectify variations between different copies of the journals. James has the best version of the Calls. Turner provides lots of good background information needed to understand how the system was created. Another book that is informative -- though I'd suspend judgment on its validity pending personal verification -- is "Golden Dawn Enochian Magick" by Pat Zalewski. It provides lots of G.D. lore connected with the system.
